Cannonau and Ogliastra cooking: an inland tradition

The cooking of this coast is not seafood cooking. It comes from pastures, gardens and terraced slopes.

· 6 min read

Cannonau is the most widely planted red grape in Sardinia, and the Jerzu area is one of its historic Ogliastra references. Terraced slopes at the foot of the limestone tacchi, with strong day-night temperature swings, are the context in which the crop consolidated.

Gastronomically the area is pastoral: sheep's and goat's cheeses, pane carasau, grilled meats. Culurgiones — parcels sealed with an ear-of-wheat pleat, filled with potato, cheese and mint — are the dish that most often identifies Ogliastra within the Sardinian repertoire.

The claims about longevity and health properties frequently attached to Cannonau belong to a popular discourse this guide does not repeat: they require scientific sources, not tourist citations.
